Berbere Roasted Potatoes
Quick & Easy 20 Minute Recipe
2 cloves garlic
2Tbs lemon juice
2Tbs olive oil
Dice potatoes, soak in cold water.
Mash garlic and salt in mortar and pestle.
Add lemon juice, Berberé and olive oil to create paste.
Toss potatoes in paste until evenly coated.
Roast in greased casserole dish at 350ºF about 30 minutes, or until tender.
For a twist, caramelized onions while the potatoes are roasting. Then mix together with chopped parsley, and top with your favorite hot sauce!
