Central American cuisine. Common foods such as a 
Street Vendor's Enchalada transformed 
with an fine-dining flair, followed by 
 exquisite blue cornmeal-crusted red snapper, and a sweet tamale 
with pineapple and raisins. Each course expertly matched with South American and Spanish wines. Viva la Mexico!

Ensalada de Chayote
Crisp chayote (also known as pear squash), nopalitos (prickly pear cactus), sliced strawberries,
spiced almonds & Mexican farmers cheese in jalapeño vinaigrette

Chile Relleno
Pasilla peppers stuffed with braised pork, served in traditional walnut cream sauce

Vendedor Ambulante de Enchilada
Street Vendor's Enchalada: topped with huitlacoche, mushrooms, corn & cotija cheese;
accompanied by smoked black beans

Pargo Rojo
Blue cornmeal-crusted red snapper with avocado-lime compound butter,
over sautéed onions, cherry tomatoes & scallions

Cordero en Salsa Roja
Lamb shanks braised in red mole, with Oaxacan rice pilaf

Tamal de Piña
Caramelized pineapple & raisin-stuffed sweet tamale with passion fruit ice cream

Each course served with traditional accompaniments such as salsas, tortillas, pickled vegetables, cilantro & limes.
