Guided by Lewis & Clark Trail Adventures,
 a day of white water adventure though the "Gorge"
perfectly timed to arrive at Fish Creek for an exclusive six course feast paired with 
Wine on July 13th, and Beer on August 10th, 
all prepared by Abraham & Sam Risho with The Silk Road Restaurant.

Tour of the Caribbean Islands

 Arepas Espana - Dominican Republic
Camebert cheese, thinly sliced spanish chorizo & mango salsita
delicately arranged upon sweet corn arepas
WINE: CRM Rosé (Corvino/Rondinella/Molinara), Chiaretto, Veneto, Italy
Wine Tasting Notes: Fresh, bright & floral with strawberry & cherry flavors. Medium bodied and dry with bold sweet fruit structure.


Langostino Fiesta Ceviche - Haiti
Petite langostino (commonly referred to as "squat lobster") gently marinated in citrus with tomatoes, garlic, cucumber, avocado & a hint of Berberé, topped with plantinos fritos (crispy plantains)
WINE: Torrontes, Zuccardi, Salta, Argentina
Wine Tasting Notes: Floral notes with peaches & apricots, acidic with forward fruit. Medium-dry, with tiny oak and a creamy buttery-ness.


Jamaican Jerk Pork Salad - Jamaica
House-made Jamaican Jerk marinade rubbed on succulent pork belly then braised & served over bibb lettuce salad tossed with strawberries, edamame & blood orange-rum vinaigrette
WINE: Sauvignon Blanc, Fault Line, Marlborough, New Zealand
Wine Tasting Notes: Creamy up front with grapefruit & lemon rind. Rich & fermented minerality.


Pato Ricaddo Rojo - Cuba
Duck breast elegantly seared with annato, coriander, cumin & orange; served over creamy maize tossed with figs, roasted corn & queso fresco; finished with cilantro mint salad
WINE: Tempranillo/Cabernet/Merlot, Navarro, Príncipe de Viana, Spain
Wine Tasting Notes: Rich plums & dark meats, red cherries & cassis. Dry and earthy, with medium to light smoke.


Lamb Molé - Puerto Rico
Rich lamb leg rolled & stuffed with chard, coffee & cocoa then expertly roasted over charcoal; served with black beans & rice simmered in coconut broth; finished with blackberry marmalade
WINE: Port Blend (TN/TR/TF/TB), Crasto, Quinto do Crasto, Douro Valley, Sabrosa, Portugal
Wine Tasting Notes: Dark plums and port-like aromas. Layers of spice & prunes on the finish, with lingering gentle tannins.

Tropical Fruit Napoleon - Virgin Islands
Prickly pears & apricot compote layered between light & flaky pieces of shortbread infused with almonds and candied ginger; topped with ricotta & banana-rum crème
WINE: Muscat, Clairette de Die, Rhône, France
Wine Tasting Notes: White & sparkling with natural frizanté. Light and silky-sweet with ripe apples, pears & peaches.
