Langostino Fiesta Ceviche - Haiti
Petite langostino (commonly referred to as "squat lobster") gently marinated in citrus with tomatoes, garlic, cucumber, avocado & a hint of Berberé, topped with plantinos fritos (crispy plantains)
WINE: Torrontes, Zuccardi, Salta, Argentina
Wine Tasting Notes: Floral notes with peaches & apricots, acidic with forward fruit. Medium-dry, with tiny oak and a creamy buttery-ness.
Jamaican Jerk Pork Salad - Jamaica
House-made Jamaican Jerk marinade rubbed on succulent pork belly then braised & served over bibb lettuce salad tossed with strawberries, edamame & blood orange-rum vinaigrette

Pato Ricaddo Rojo - Cuba
Duck breast elegantly seared with annato, coriander, cumin & orange; served over creamy maize tossed with figs, roasted corn & queso fresco; finished with cilantro mint salad

Rich lamb leg rolled & stuffed with chard, coffee & cocoa then expertly roasted over charcoal; served with black beans & rice simmered in coconut broth; finished with blackberry marmalade
